Broccoli Cheddar Grilled Chicken

This lean and green recipe is about to broc your world. I like it make it whenever I'm craving something lite... yet cheesy. This is a hit with just about everyone so a good option if you're cooking for a group.


Serving size: 1

Ingredients:

9 oz chicken breast, 5.6 oz once cooked (15/16 leaner)⠀

Pinch of salt and pepper (1/2 condiment)⠀

1/4 Tsp garlic powder (1/2 condiment)⠀

1 cup chopped broccoli (2 greens)⠀

1 tbsp reduced fat shredded cheddar cheese (1/16 lean)⠀

1 tbsp reduced fat cream cheese (1 condiment)⠀

Olive oil cooking spray


Directions:

1. Preheat grill to 400.

2. Place the chick breasts into a gallon zip-top bag. Use the flat side of a meat mallet or rolling pin and pound until 1/4-inch thick. Set the flattened chicken breast aside and repeat with remaining breasts. This is optional but will result in juicy, evenly cooked chicken.

3. Spray chicken and season with salt, pepper, garlic powder on both sides.⠀

4. Grill chicken for 4-6 minutes, flip, and leave on for another 3. This can vary depending on the thickness of your chicken. Use a meat thermometer if you're not sure.

5. Let chicken rest for 5-10 minutes.

6. Meanwhile, spray broccoli and roast in the oven on 425 for 8-10 minutes.

7. In a nonstick pan on medium low heat, mix roasted broccoli, cream cheese, and cheddar cheese until gooey and combined.

8. Top grilled chicken with broccoli mixture. ⠀
