I am Mediterranean obsessed and needed some kind of Cava replica. This chicken gyro bowl hit the spot! Perfect for a spring night.

Ingredients:
1 1/2 cup riced cauliflower (3 green)
10 oz chicken breast (1 2/3 leaner)
2 tsp olive oil (2 healthy fats)
1/2 tbsp lemon juice (1/2 condiment)
1/4 tsp paprika (1/2 condiment)
1/4 tsp oregano (1/2 condiment)
1/4 tsp salt (1 condiment)
1/4 tsp pepper (1/2 condiment)
2 pepperoncinis (1 snack)
Mediterranean Salad: 1/4 cup diced tomato (1/2 green)
1/4 cup diced cucumber (1/2 green)
1/4 cup diced scallion (1/2 green)
1/4 cup diced red pepper (1/2 green)
1/2 tbsp lemon juice (1/2 condiment)
1/8 tsp salt (1/2 condiment)
Tzatziki Sauce:
4 oz plain nonfat Greek yogurt (1/3 leanest)
1/2 cup shredded cucumber (1 green)
1/2 garlic clove minced (1/2 condiment)
1/2 tbsp lemon juice (1/2 condiment)
1/2 tsp dill weed (1/2 condiment)
1/8 tsp salt (1/2 condiment)
Instructions:
Whisk together olive oil, 1/2 tbsp lemon juice, paprika, oregano, pepper, and 1/4 tsp salt in a medium size bowl.
Cube chicken into 1 inch pieces.
Add chicken into bowl with marinade. Cover and refrigerate for 1 hour - overnight.
Grate 1/2 cup of cucumber. You don’t need to peel or seed the cucumber first, just grate on the large holes of your box grater. Squeeze liquid out of the grated cucumber. Add grated cucumber I to a small bowl.
Add the Greek yogurt, minced garlic, 1/2 tbsp lemon juice, dill, and 1/8 tsp salt to small bowl with cucumber. Mix well and refrigerate until serving. This is your tzatziki!
Combine diced cucumber, tomato, scallion, red pepper, 1/2 tbsp lemon juice and 1/8 tsp salt into small bowl. Refrigerate until serving. This is your Mediterranean salad!
Arrange marinated chicken pieces onto sheet pan.
Bake chicken on 375 for 20 minutes until cooked through.
Broil for a final minute to get a nice char.
Steam riced cauliflower until soft.
Assemble gyro bowls with cauliflower rice, chicken, Mediterranean salad, and tzatziki. Top with a pepperoncini!
