Mini Cheeseburgers with Bell Pepper Buns

These were fun, delicious, and so satisfying. Perfect for a summer night!

1 Serving:


Ingredients:

8 patties made out of 6 oz 95% lean ground beef patties (will cook down to 4 oz total) (2/3 leaner)

2 oz reduced fat cheddar cheese (1/3 lean)⁣

Four mini bell peppers, sliced in half lengthwise (2 greens)⁣

1/4 cup sliced cherry tomato (1/2 green)⁣

1/2 cup chopped romaine lettuce (1/2 green)

1 tbsp diced onion (1 condiment)⁣

1 dill pickle sliced (1/2 snack)

1/2 tsp garlic salt (1 condiment)

For a sauce you could use your final condiment and add mustard or ketchup. Or use a healthy fat and do thousand island dressing.

  1. Preheat grill to 400.

  2. Mix garlic salt into the ground beef with you hands - mix well. Then roll ground beef into 8 small patties.

  3. Grill burger patties for a few minutes on each side and melt the cheese on top.

  4. Lay the mini bell pepper slices out on a plate. Place a cooked burger patty into each bell pepper half.

  5. Top each patty with lettuce, tomato, onion, pickle, and sauce of our choice.

  6. Enjoy!
