I’ve seen versions of these all over the place and needed to give them a try! This is how I made mine. So easy, so light, so delish!
1 Serving.
6 oz 99% lean ground turkey breast, 4 oz once cooked (2/3 leanest)
1 tsp taco seasoning (2 condiments)
2 oz reduced fat Mexican cheese (1/3 lean)
Four mini bell peppers, sliced in half lengthwise (2 greens) 1/2 cup chopped romaine lettuce (1/2 greens)
1/4 cup chopped tomato (1/2 green)
2 tbsp guacamole (1 healthy fat)
2 tbsp lite sour cream (1 healthy fat)
1/8 cup pickled jalapeños (1 snack)
1. Lightly spray large nonstick pan with cooking spray. Cook ground turkey breast On medium high heat until browned and cooked through. (Break up turkey as well as you can and brown it. I find that the smaller the pieces the more it tastes like ground beef 🤷🏼♀️).
3. Once meat is browned, add taco seasoning and 1/2 cup water to skillet. Simmer for a few minutes until well combined.
4. Lay the mini bell pepper slices out on a plate. Fill each with ground Turkey.
5. Then, top each with cheese, lettuce, tomato, onion and jalapeño. Dip in sour cream and guacamole.
6. Enjoy!
